  • Figs, dried4× handful (320 g)
  • Halloumi, Cheese10× portion (200 g)
  • Spinach, fresh or frozen2× handful (50 g)
  • Almonds1× handful (30 g)
  • Honey1× tablespoon (25 g)
  • Olive oil1× tablespoon (10 g)
  • Lemon1× slice (10 g)
  • Ginger, fresh0.5× root (10 g)
  • Pepper, black1× pinch (1 g)
  • Salt1× pinch (0.5 g)

How to make Fig, spinach and halloumi salad

  1. 1. Rinse and dry the spinach, cut into pieces then arrange in a bowl.

  2. 2. Wash, dry then quarter the figs. Arrange on top of the spinach.

  3. 3. Cut the halloumi into slices. Heat up a grill pan, pour in oil and lay in the slices of halloumi. Grill for around 2 minutes on medium heat. Turn the slices over and grill again, for a slightly shorter time. Add to the salad.

  4. 4. Mix the grated ginger, honey, oil and lemon juice in a small bowl, add a pinch of salt and pepper. Pour over the salad. Sprinkle the almond flakes on top of the salad.
