  • Rice Noodles200 g
  • Courgette100 g
  • Nuts1× handful (30 g)
  • Chives, fresh4× tablespoon (20 g)
  • Pepper, cayenne, ground2× tablespoon (12 g)
  • Coriander leaves, dried2× tablespoon (8 g)
  • Mint, dried1× pinch (2 g)

How to make Rice noodles with courgette

  1. 1. Wash and slice the courgette, then sprinkle with salt. Roast on a grill pan or frying pan for around 15 minutes, stirring occasionally, towards the end add the chopped nuts and brown them slightly.

  2. 2. Mix all the ingredients of the sauce together in a bowl. Thinly slice the chilli pepper and add it to the sauce. Chop the chives. Boil the noodles according to the instructions on the packet, drain and rinse with lukewarm water.

  3. 3. Return the drained noodles to the pot, add the sauce and stir. Then add the courgette with nuts, the chives, half of the fresh mint and half of the coriander. Pour the rest of the fresh herbs on the plate.
