How to make Mexican fried rice with turkey

  1. 1. Dice the turkey breast, add the salt, pepper, seasoning and pressed garlic.

  2. 2. Boil the rice in salted water, drain and leave on a large plate to cool

  3. 3. Heat some olive oil in a pan, and fry the meat on both sides for 3-4 minutes in total. Add half the chopped red onion and diced pepper. Stir fry for around 2 minutes.

  4. 4. Add the drained sweetcorn and beans and stir. Pour in the boiled rice, add the rest of the onion, stir then fry for about 2 minutes.

  5. 5. Remove from the heat, add the peeled and diced tomatoes and mix.

  6. 6. Transfer to a plate, add the peeled and sliced avocado, and sprinkle with fresh coriander leaves.
