How to make Rancher’s eggs

  1. 1. Dice the bacon, place it in a pan and melt out the fat on a low heat. Transfer to a plate, leaving the fat in the pan.

  2. 2. Glaze the chopped onion on the leftover fat. Add the beans along with a few tablespoons of the brine and seasoning (cumin, smoked paprika, salt, pepper). Heat briefly, then crush everything with a potato press into a fairly even paste.

  3. 3. Heat up the butter in a large pan and fry the eggs.

  4. 4. Meanwhile, prepare the tomato salsa - peel and finely dice the tomato, finely chop the red onion. Mix the ingredients together.

  5. 5. Spread the bean paste on the bread, place the fried eggs, bacon and tomato salsa on top, Add the avocado slices, sprinkle with coriander and season with salt and pepper. Drench the avocado and salsa with lime juice.
