How to make Courgette cream with feta

  1. 1. Peel and dice the courgette.

  2. 2. Wash the leek, cut off the dark green ends and slice the white and light green part.

  3. 3. Melt the butter in a pan with the olive oil, add the grated garlic and leek. Fry for around 5 min, stirring constantly.

  4. 4. Add the courgette and fry for around 3 min, stirring constantly.

  5. 5. Add water and bring to the boil.

  6. 6. Add the turmeric and season with salt and pepper to taste. Boil everything for around 15 min.

  7. 7. Blend the soup with cream and serve with crumbled feta and chives.
