How to make Cod and cauliflower soup from broth

  1. 1. Stew the diced onion and peeled whole garlic clove in olive oil in a pot. Add the butter and broth to the glazed onion, then bring to the boil.

  2. 2. Add the diced cauliflower and boil for approx. 5 min. Add the blended tomatoes (skinless and seeded) and seasoning, and salt and pepper to taste. Boil for around 5 minutes.

  3. 3. Add the diced cod and boil on a lower heat for approx. 3 min. You can also optionally add chopped basil leaves and Worcestershire sauce.
