How to make Courgette fritters with cheese and tomato

  1. 1. Wash the courgette, cut the ends of then peel and grate.

  2. 2. Squeeze the water from the courgette, add the eggs, flour and salt, then mix together.

  3. 3. Heat the oil in a pan and fry the fritters, after turning them over cover them with cheese and keep frying until the cheese melts.

  4. 4. Slice the tomatoes, and arrange them on top of the fritters along with the parsley.
