How to make Chicory and apple salad

  1. 1. Lightly roast the walnuts in a dry pan.

  2. 2. Cut the green leaves off the leeks, leaving the white and light green parts. Cut into slices and place them in a colander immersed in a bowl of cold water. The dry them on a paper towel.

  3. 3. Rinse and dry the chicory. Cut out the core and ugly outer leaves. Cut into pieces.

  4. 4. Carefully wash the apple, remove the core and cut into eighths. Then drizzle the sliced fruit with half of the lemon juice.

  5. 5. Prepare the dressing: add the olive oil, mustard, lemon juice and honey in a blender. Blend until the ingredients combine. Add salt and pepper to taste

  6. 6. Arrange the lettuce on plates, place the rest of the prepared ingredients on the layer of green - the leek slices and chicory pieces, sliced apple and roasted nuts. Pour the dressing over everything.
