  • Water1.5× cup (375 ml)
  • Quinoa0.5× cup (95 g)
  • Olive oil4× tablespoon (40 g)
  • Curly kale1.5× handful (30 g)
  • Blueberries0.5× handful (25 g)
  • Honey1× teaspoon (12 g)
  • Mustard, smooth1× teaspoon (10 g)
  • Lemon juice, fresh0.2× tablespoon (6 ml)
  • Salt2× pinch (1 g)
  • Pepper, black1× pinch (1 g)

How to make Kale, blueberry and quinoa salad

  1. 1. Heat up half of the portion of olive oil in a pan. Add the quinoa and fry until it is slightly brown. Add salt and pepper to taste. Pour in half of the amount of water and boil until the quinoa absorbs it. Pour in the other half of the water and boil until the quinoa is soft.

  2. 2. Prepare the sauce. Put the remainder of the olive oil, freshly squeezed lemon juice, honey and mustard in a bowl. Thoroughly mix all the ingredients together, with a whisk for example, until it forms a smooth and even emulsion. Set aside the resulting sauce, then stir it again just before serving.

  3. 3. Rinse the blueberries and kale. Remove the hard stems from the kale leaves.

  4. 4. Combine the quinoa with the kale and blueberries, then pour the prepared dressing over it. Mix everything thoroughly.
