How to make Grilled aubergine, tomato and mozzarella sandwich

  1. 1. Heat the oven to 200C C

  2. 2. Cut off slices of aubergine of around 20g, pierce them with a fork then spread olive oil on both sides and grill in a pan

  3. 3. Place the grilled aubergine, mozzarella and tomato on a slice of bread and bake for around 3-5 min

  4. 4. After removing from the oven, add salt and pepper, drizzle with balsamic vinegar and garnish with fresh basil
