  • Wholemeal flour1× cup (140 g)
  • Raisins3× handful (120 g)
  • Pumpkin seeds3× teaspoon (15 g)
  • Herbs and spices1× teaspoon (2 g)

How to make Apple and raisin muffins with flax seeds

  1. 1. Pour a glass of water over the raisins and boil for around 15 minutes until soft.

  2. 2. Pour 6 tbs of water over the flax seeds and boil for around 15 minutes too.

  3. 3. Add the diced apple to the boiled raisins and mix in a blender. Blend the water and raisins too.

  4. 4. Mix the flour and baking soda together, pour in the fruit mousse and boiled flax seeds. Mix everything thoroughly.

  5. 5. Pour the mass into ramekins and bake for 20 minutes at 190C.
