  • Courgette2× slice (60 g)
  • Eggs chicken yolk2× piece (40 g)

How to make Baked eggs with vegetables

  1. 1. Heat the oven to 180C. Grease a small ramekin with coconut oil (1/4 of the amount in the recipe).

  2. 2. Dice the courgette and peppers.

  3. 3. Fry the peppers and courgette in the remaining oil until soft, then add the spinach and fry for another 1-2 minutes.

  4. 4. Place the cooked vegetables in the greased ramekin and sprinkle with mozzarella.

  5. 5. Crack the egg and the yolk into the ramekin and season with salt and pepper.

  6. 6. Bake for 10 minutes until the egg white sets.
