  • Beet green100 g
  • Cream, UHT, half4× tablespoon (60 g)
  • Potato flour1× tablespoon (15 g)
  • Butter1× teaspoon (5 g)
  • Garlic1× clove (5 g)
  • Salt4× pinch (2 g)
  • Pepper, black1× pinch (1 g)

How to make Turkey loins with beet green sauce

  1. 1. Wash the turkey loins, dry them with a paper towel and season with salt and pepper, then bake in the oven at 180C for approx. 15-20 min.

  2. 2. Cut the beetroot off the greens. Rinse, dry then chop the beet leaves into small pieces. Wash, peel and finely dice the beetroot.

  3. 3. Melt the butter in a pan and fry the chopped garlic, then add the beetroot. After about 10 minutes, add the leaves. Once the beet leaves soften and lose volume, add the cream and potato flour. Bring to the boil, stirring constantly, until the sauce thickens. Add salt and pepper to taste.

  4. 4. Serve the resulting sauce with the turkey loins.
