  • Chicken breast, without skin550 g
  • Reduced Fat Coconut Milk400 g
  • Courgette365 g
  • Chickpeas1× package (240 g)
  • Tikka masala curry paste60 g
  • Red onion2× piece (50 g)
  • Coriander leaves, fresh1× handful (20 g)
  • Garlic2× clove (10 g)
  • Chilli powder5 g
  • Extra virgin olive oil1× teaspoon (5 ml)

How to make Fit curry courgette and chickpeas by Vi.

  1. 1. Cut chicken breast into 2cm dice.

  2. 2. Put olive oil onto pan, add diced chicken. Leave for 3 mins once chicken becomes white, without water. Add diced red onion and pressed garlic.

  3. 3. Cook for 10 mins. Stir it in a meantime to make it even gold. Add curry paste.

  4. 4. Cut courgette into 2cm dice. Add to chicken, stir and cover dor another 5-10 mins.

  5. 5. Add chickpeas without water. Stir and leave for 5 mins.

  6. 6. Add coconut milk, boil it. Add seasoning if you like. It is very good with fresh coriander. Enjoy x
