How to make Aubergine stuffed with turkey and mushrooms

  1. 1. Cut the aubergine lengthwise, then remove and chop up the inside

  2. 2. Finely chop the onion and mushrooms, then stew them in a pan along with the flesh of the aubergine

  3. 3. Add the chopped turkey meat, then season with salt, pepper, chopped basil and chilli, and fry it all

  4. 4. Transfer the filling to the aubergine and sprinkle with mozzarella

  5. 5. Bake for around 50 minutes at 170C
