How to make Greek Beef Stifado ROMO

  1. 1. Heat a large pot or Dutch oven over medium heat. Add the beef cubes and brown them on all sides until they develop a rich, deep color. Remove the beef from the pot and set it aside.

  2. 2. In the same pot, add the sliced onions and sauté until they become soft and translucent.

  3. 3. Add the minced garlic and sauté for an additional minute until fragrant.

  4. 4. Return the beef cubes to the pot and mix them with the onions and garlic.

  5. 5. Pour in the red wine, tomato sauce, and add the cloves, cinnamon, black pepper, and bay leaves. Stir everything together to combine.

  6. 6. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer gently for about 2 to 3 hours or until the beef is tender. Stir occasionally to prevent sticking and to ensure even cooking.

  7. 7. After 2 to 3 hours, check the beef for tenderness. If it's not yet tender, continue simmering for an additional 30 minutes or until it reaches the desired tenderness.

  8. 8. Once the beef is tender, add the olive oil to the pot and simmer for an additional 10 minutes to allow the flavors to melt together.

  9. 9. Taste the stew and adjust the seasoning if needed. You can add more salt or pepper according to your preference. If the sauce it's too acidic you can add a teaspoon of sugar

  10. 10. Remove the pot from the heat and let it sit for a few minutes before serving to allow the flavors to settle.

  11. 11. Serve the beef stifado hot with your choice of accompaniments such as rice, mashed potatoes, or crusty bread. Enjoy your delicious beef stifado!
