  • British Chicken Thigh Fillets1× portion (100 g)
  • Avocado0.5× piece (75 g)
  • Sandwich thins white0.3× package (72 g)
  • Sunkissed tomatoes20 g
  • Lemon juice, fresh0.5× tablespoon (15 ml)

  1. 1. Flatten two chicken thighs and add to frying pan with a little oil - salt and pepper each side and fry on medium heat for 3-4 minutes on each side;

  2. 2. Meanwhile, mash half an avocado in a bowl and add in a handful of chopped sun-kissed tomatoes;

  3. 3. Mix the avocado and sun-kissed tomatoes until combined. Add a sprinkle of chilli flakes, pepper and squeeze of lemon to taste;

  4. 4. Toast two thins (insides facing out) and then layer avocado mixture on top of two halves. Place a pinch of rocket on each halve and top with the chicken thighs... enjoy!
