  • Feta Cheese in Brine2× slice (40 g)
  • Pomegranate seeds0.3× portion (24 g)

  • Olive oil1× tablespoon (10 g)

How to make Grilled aubergine, whipped feta and pomegranate seeds

  1. 1. Cut the aubergine into slices, place on a tray lined with kitchen towel, and sprinkle with salt. Leave for 15-20 minutes;

  2. 2. Meanwhile, make the whipped feta by adding the feta, greek yoghurt, zest of a lemon (or juice of half if preferred), herbs such as mint and pepper flakes, and olive oil to a blender and blend until smooth. Set aside.

  3. 3. Wipe the moisture and excess salt off of the aubergine. Brush each side with olive oil and sprinkle with salt and pepper and herbs or spices of choice;

  4. 4. Cook the aubergine on a griddle pan for 3-4 minutes in each side;

  5. 5. Scoop some of the whipped feta onto a plate and top with the grilled aubergine and a sprinkle of pomegranate seeds. Accompany with salad of choice.
