  • Sweet crisp salad1× package (128 g)
  • Vine tomatoes50 g
  • Fillets of Anchovies in Olive Oil40 g
  • Chicken Stock Cube2× portion (20 g)
  • Pitted Black Olives1× portion (15 g)
  • Red Pepper Flakes3 g

How to make Stuffed pepper with feta

  1. 1. Preheat oven to 200°c. Chop two bell peppers in half and place into an oven dish so that they sit snug;

  2. 2. Chop up the anchovies, vine tomatoes and black olives into small pieces. Distribute inside the peppers and season with red pepper or chilli flakes;

  3. 3. Top the peppers with pieces of feta and drizzle with a little oil and black pepper;

  4. 4. Pour a little stock into the bottom of the dish and then bake in the oven for 25 minutes until the feta starts to go golden and the peppers are soft;

  5. 5. Plate up half of the pot of salad with a drizzle of dressing of choice and add two pepper halves once cooked. Enjoy!
