  • Skyr, Icelandic yoghurt1× portion (150 g)
  • Eggs chicken1× portion (60 g)
  • Strawberries0.5× handful (35 g)
  • Erythritol3× tablespoon (30 g)
  • Sugar-free vanilla pudding, instant0.25× package (8.8 g)

How to make Skyr cheesecake

  1. 1. Separate the egg whites from the yolks, and whisk them into stiff foam.

  2. 2. Blend the erythritol, yolk, pudding and skyr together thoroughly. Once all the ingredients have bonded, add the egg white and stir gently.

  3. 3. Pour the prepared mass into a casserole dish lined with baking paper or grease.

  4. 4. Bake the cheesecake for around 30 minutes at 160 C.

  5. 5. Garnish it with strawberry quarters before serving.
