How to make Baked pumpkin, red bell pepper, and onion with roasted garlic dip

  1. 1. Dice the pumpkin and red pepper, and cut the onion into thick strips. Slice the garlic bulb in half. Place all these vegetables into an oven-proof dish, drizzle with olive oil, and season. Bake in a preheated oven at 180°C for 30-35 minutes. Once the vegetables are cooked, let them cool slightly.
