How to make Scottish-style eggs with salad

  1. 1. Finely chop the onion and sauté it in a pan with 2/3 of the olive oil along with the ground meat, seasoning with salt and pepper.

  2. 2. In a separate pan, fry sunny-side-up eggs.

  3. 3. Mix Skyr with the mustard.

  4. 4. On a plate, prepare a salad with lamb's lettuce and cherry tomatoes cut in half. Drizzle it with the remaining olive oil and balsamic vinegar.

  5. 5. Place the cooked meat next to the salad, then top it with the fried eggs. Drizzle the meat and eggs with the Skyr and French mustard dressing.
