How to make Juicy beef with vegetables in aromatic herbs

  1. 1. In a bowl, mix lemon juice, mustard, half the olive oil, salt, pepper, and herbs.

  2. 2. Rub the beef with the marinade and let it sit for 60 minutes.

  3. 3. Preheat the oven to 200°C.

  4. 4. Cut the carrot, peppers, zucchini, and onion into thick sticks. Halve the cherry tomatoes.

  5. 5. Place the beef in the center of a baking dish, arranging the chopped vegetables around it. Add a whole clove of garlic (unpeeled but slightly crushed). Drizzle with the remaining olive oil and sprinkle with spices.

  6. 6. Bake for about 25–30 minutes, until the beef is well-cooked but still juicy, and the vegetables are tender and slightly browned.

  7. 7. Serve on a plate, garnished with chopped parsley.
