How to make Beef koftas with fresh vegetable salad and pita

  1. 1. Preheat the oven to 200°C, using the top heating element.

  2. 2. Prepare the koftas. Finely dice the peeled onion and chop the parsley. In a bowl, mix the ground beef with the onion, parsley, and all the spices except the Herbes de Provence. Knead the mixture with your hand until smooth.

  3. 3. With wet hands, shape the meat into elongated koftas. Soak long skewers in water to prevent them from burning during baking. Thread the koftas onto the skewers, place them on a baking sheet lined with parchment paper, and brush with oil. Bake for 30 minutes.

  4. 4. Meanwhile, prepare the sauce and salad. Peel and finely chop the garlic, then mix it with skyr and Herbes de Provence. Wash and dice the vegetables, then mix them with the arugula.

  5. 5. Place the pita in the oven during the last few minutes of baking the meat. Check the package for warming instructions.

  6. 6. Arrange the hot koftas on a plate alongside the salad, a bowl of sauce, and the pita bread.
