How to make Spiced herring with bread

  1. 1. Prepare the marinade. Mix mustard, honey, lemon juice, soy sauce, 1/3 of the rapeseed oil, and cayenne pepper thoroughly.

  2. 2. Toast bay leaf, cloves, and star anise in a dry pan for about a minute. Add the remaining spices: cinnamon, coriander, ginger, cardamom, and cumin. Stir and remove from heat after a few seconds.

  3. 3. Add the spices to the marinade and mix vigorously.

  4. 4. Remove the herring from the oil and cut it into large cubes. Peel and finely dice the onion.

  5. 5. Layer the herring in a jar, add a layer of onion, and pour in the marinade. Top everything with oil and refrigerate for at least 1 day to allow the herring to absorb the flavors.

  6. 6. Serve the herring with rye bread.
