How to make Shrimp tacos with vegetable salsa and coriander

  1. 1. Wash, clean, and pat dry the shrimp with a paper towel.

  2. 2. Heat half of the olive oil in a pan and add thinly sliced garlic. Once the garlic is slightly golden, add the shrimp and fry for about 3-4 minutes, stirring to cook them evenly. Set aside when done.

  3. 3. Meanwhile, prepare the salsa. In a bowl, mix halved cherry tomatoes, diced mango, and avocado. Drizzle with olive oil and season with salt and pepper.

  4. 4. Fill the taco shells with the vegetable salsa and shrimp.

  5. 5. Garnish with natural yogurt, thinly sliced red onion, and fresh coriander before serving.
