  • Skyr, Icelandic yoghurt10× tablespoon (150 g)
  • Cornflour4× tablespoon (60 g)
  • Honey1.5× tablespoon (37.5 g)
  • Potato starch2× tablespoon (30 g)
  • Lemon juice, fresh1× tablespoon (30 ml)
  • Butter1× teaspoon (5 g)
  • Baking Powder4 g
  • Lemon peel1× teaspoon (3 g)

  1. 1. Preheat the oven to 180°C.

  2. 2. Separate the egg yolks from the whites.

  3. 3. Beat the egg yolks with honey. Then add the skyr, lemon zest, and lemon juice and mix well.

  4. 4. Sift the corn flour, potato starch, and baking powder, then add them to the mixture and mix again.

  5. 5. Whisk the egg whites until stiff peaks form. Once ready, gently fold them into the batter with a spatula (do not mix too vigorously or for too long).

  6. 6. Pour the batter into a buttered baking pan and place it in the oven for 30 minutes (check with a toothpick).

  7. 7. Once the cake is done, turn off the oven and leave the door ajar. Let the cake sit for another 5 minutes. After that, remove and allow it to cool completely.

  8. 8. Only remove the cake from the pan once it is completely cooled.
