How to make Chocolate Muffins with Chocolate Cream

  1. 1. Take the butter out of the fridge beforehand so it softens.

  2. 2. Prepare the ganache. Chop the dark chocolate and place it in a bowl. Heat the cream (bring it to a boil), then pour it over the chocolate in the bowl and stir until you get a smooth ganache. Once ready, pour it into a piping bag with a 4mm tip and set it aside to cool.

  3. 3. Prepare the muffin batter. Melt the milk chocolate in a water bath. Using an electric mixer, beat the softened butter with sugar. Gradually add the eggs one at a time, then add the milk. Add the flour and yeast (previously mixed together), and then the melted milk chocolate. Mix everything thoroughly.

  4. 4. Line the muffin tin with paper liners and fill each liner with the muffin batter up to 3/4 of its height.

  5. 5. Bake the muffins for 15-20 minutes in a preheated oven at 180°C.

  6. 6. If the ganache is still too runny, place it in the fridge for 10-30 minutes.

  7. 7. Once the muffins have cooled, decorate them by spreading the ganache in a nest shape.

  8. 8. You can place small chocolate eggs in the center of the ganache for decoration.
