  1. 1. Peel and dice the sweet potato, then steam until soft.

  2. 2. Blend the oat flakes into flour.

  3. 3. Let the cooked sweet potato cool, then blend into a puree.

  4. 4. In a bowl, mix the sweet potato puree with the oat flour, salt, and black pepper (the dough should be pliable and not sticky).

  5. 5. Prepare a pizza tray or baking sheet by lining it with parchment paper and greasing it lightly with olive oil.

  6. 6. Shape the dough into a ball, then flatten and roll it out into a 30 cm diameter circle.

  7. 7. Poke the crust with a fork in several places and bake at 180°C for about 15 minutes.

  8. 8. Meanwhile, slice the mushrooms, mozzarella, onion (into thin strips), and bell pepper (into thin strips).

  9. 9. In a small bowl, mix the tomato passata with salt, black pepper, and oregano.

  10. 10. Once the crust is ready, remove it from the oven, spread the tomato sauce over it, and top with the prepared ingredients.

  11. 11. Return to the oven and bake for another 10 minutes.
