How to make Orzo pasta salad with feta

  1. 1. Cook the orzo pasta in salted water according to the package instructions.

  2. 2. Cut the feta cheese into cubes and bake in the oven at 180°C for 15 minutes, until it’s slightly browned and crispy.

  3. 3. Meanwhile, prepare the vegetables. Dice the peppers and onion into small pieces, and halve the cherry tomatoes.

  4. 4. In a pan with heated olive oil, add the crushed garlic and vegetables, and sauté until they are soft. Season with a little salt and pepper.

  5. 5. Remove the pan from the heat, add the cooked orzo pasta, and stir to combine.

  6. 6. Transfer the salad to a plate and top with the roasted feta. Garnish with halved cherry tomatoes and basil leaves.
