  • Water1× cup (250 ml)
  • Skyr, Icelandic yoghurt1× portion (150 g)
  • Strawberries1.25× handful (87.5 g)
  • Blueberries, raw0.5× handful (25 g)
  • Sugar-free strawberry gelatin powder0.5× package (7 g)

How to make Protein Foam with Skyr

  1. 1. Take the strawberries out of the freezer about 1 hour in advance so they can thaw slightly.

  2. 2. Pour boiling water over the jelly powder and stir until the powder dissolves. Set aside to cool for about an hour.

  3. 3. After an hour, beat the jelly with a mixer for about 15 minutes, then gradually add the skyr and continue beating.

  4. 4. Blend the strawberries into a purée, then add them to the mixture and mix for about 5 more minutes.

  5. 5. Pour the mixture into a dish and refrigerate for at least 1 hour.

  6. 6. Before serving, decorate with fresh blueberries.
