How to make Skyrnik a'la Dubai Chocolate

  1. 1. Separate the egg whites from the yolks and whip the egg whites until stiff peaks form.

  2. 2. In a separate bowl, thoroughly mix erythritol, egg yolks, pudding, and skyr. Once everything is combined, gently fold in the whipped egg whites.

  3. 3. Pour the prepared mixture into a greased, oven-safe dish.

  4. 4. Bake the skyr cake for about 30 minutes at 160°C in the oven or air fryer.

  5. 5. In the meantime, mix the kataifi dough thoroughly with the pistachio cream and peanut butter.

  6. 6. Once the skyr cake has cooled, spread the kataifi mixture on top and smooth it out with a spoon.

  7. 7. Melt the dark chocolate in a water bath. Drizzle the melted chocolate over the entire cake and sprinkle with chopped pistachios.

  8. 8. Refrigerate for about 20-30 minutes to let the chocolate set.
