How to make Salad with Glazed Carrots and Feta

  1. 1. Peel the carrots and cut them into 1.5 cm pieces. Squeeze the juice from the orange.

  2. 2. In a bowl, mix the orange juice, grated or crushed garlic, soy sauce, honey, and chili powder.

  3. 3. Heat olive oil in a pan and sauté the carrots over medium heat. Stir occasionally.

  4. 4. Once the carrots are slightly browned, add the prepared marinade with soy sauce. Cook the carrots in the marinade for about 5-7 minutes, until the sauce thickens and coats the carrots, caramelizing them.

  5. 5. On a plate, arrange the arugula and place the glazed carrots on top.

  6. 6. Sprinkle with crumbled feta cheese, pumpkin seeds, and broccoli sprouts.
