How to make Omelette with Cottage Cheese, Pistachio Cream, and Nectarine

  1. 1. Beat the eggs in a bowl. Slice the banana and nectarine into thin pieces.

  2. 2. Heat the olive oil in a pan, pour in the eggs, and arrange the banana slices evenly over the surface. Cover the pan. Cook the omelette over low heat until it sets. Once it does, flip it briefly to brown on the other side.

  3. 3. In the meantime, blend the cottage cheese with the skyr.

  4. 4. Transfer the omelette to a plate, spread the blended cottage cheese, and drizzle with the pistachio cream (you can do this in reverse if the cream is too thick, as it will melt on the warm omelette and be easier to spread).

  5. 5. Finally, place the nectarine slices on top and sprinkle with chopped pistachios.
