  • Hazelnuts1× tablespoon (15 g)
  • Cocoa powder1× tablespoon (10 g)
  • Erythritol1× teaspoon (5 g)
  • Olive oil1× teaspoon (5 g)
  • Vanilla extract2 ml
  • Salt2× pinch (1 g)

How to make Fluffy Chocolate Omelette with Skyr, Fruit, and Hazelnuts

  1. 1. Separate the egg whites from the yolks. Add a pinch of salt to the egg whites and beat them until stiff peaks form.

  2. 2. In another bowl, mix the egg yolks, milk, erythritol, flour, and cocoa powder until smooth.

  3. 3. Gently fold in the whipped egg whites using a wooden spatula until just combined.

  4. 4. Heat olive oil in a pan, then pour in the egg mixture. Cover the pan and cook the omelette until set on both sides.

  5. 5. Meanwhile, melt the dark chocolate in a double boiler. Also, mix the Skyr with vanilla extract.

  6. 6. Cut the omelette in half.

  7. 7. Spread Skyr on one half of the omelette, then cover it with the other half.

  8. 8. Drizzle the melted dark chocolate on top and decorate with fresh raspberries and banana slices.

  9. 9. Finally, sprinkle with chopped hazelnuts.
