How to make Omelette with Ricotta, Chanterelles, Cherry Tomatoes and Rocket

  1. 1. Put the chanterelles in a bowl, sprinkle with salt and pour boiling water over them. Once the sand and dirt settle at the bottom, take the mushrooms out and dry thoroughly with paper towels.

  2. 2. Slice the onion, chop the chives, and cut the cherry tomatoes in half.

  3. 3. Heat the butter in a small frying pan, add the onion and cook until slightly translucent, then add the cleaned chanterelles. Season with salt and fry until golden. Then remove the mushrooms from the pan.

  4. 4. Crack the eggs into a bowl, season with salt and pepper, and whisk. Pour the egg mixture into the same pan and cook the omelette for about 5 minutes. Flip it halfway through cooking.

  5. 5. Top the cooked omelette with rocket, halved cherry tomatoes, pieces of ricotta, and chanterelles. Fold in half and sprinkle with chopped chives. Serve immediately.
