How to make Apple and Rhubarb with Almond Crumble

  1. 1. Preheat the oven to 180°C (skip this step if using an air fryer).

  2. 2. Peel the apple, quarter it, remove the core, then slice. Cut the rhubarb into 0.5–1 cm pieces.

  3. 3. In a bowl, mix the rhubarb and apples with half the erythritol, cinnamon, and nutmeg. Gently toss to coat the fruit evenly, then transfer to an ovenproof dish.

  4. 4. In another bowl, combine almond flour, the remaining erythritol, and chopped almonds.

  5. 5. Add diced butter. Rub the mixture with your fingers until it resembles coarse breadcrumbs.

  6. 6. Spread the crumble evenly over the spiced fruit in the baking dish.

  7. 7. Bake for 25–30 minutes or until the topping is golden and the fruit soft and bubbling.

  8. 8. Let the crumble cool for a few minutes before serving.
