  • Low-sugar cherry jam4× teaspoon (60 g)
  • Cheese, Ricotta2.5× tablespoon (50 g)

  • Water2× tablespoon (20 ml)

How to make Grilled Chicken Breast with Ricotta and Cherry Salad

  1. 1. Wash the chicken, pat dry with a paper towel and trim off any unwanted membranes. If the fillets are very thick, slice them thinner.

  2. 2. Season the chicken on both sides with salt and pepper. Grill on a rack, electric grill or grill pan.

  3. 3. Slice the chilli into thin rings.

  4. 4. Meanwhile, prepare the cherry vinaigrette: mix lime juice, balsamic vinegar, cherry jam, olive oil and water. Pour the mixture into a pan and bring to a boil until slightly thickened.

  5. 5. Pit the cherries, then mix them and the chilli slices into the vinaigrette.

  6. 6. On a plate, arrange washed lamb's lettuce and spoonfuls of ricotta. Drizzle with the cherry-chilli vinaigrette. Serve the salad with the grilled chicken.
