  • Strawberries2.25× cup (337.5 g)
  • Skyr, Icelandic yoghurt1× portion (150 g)
  • Sugar-free ladyfingers1.5× package (150 g)
  • Water6.25× tablespoon (62.5 ml)
  • Erythritol2.5× tablespoon (25 g)
  • Gelatine4× teaspoon (16 g)

How to make No-Bake Strawberry Cake

  1. 1. Wash, dry, and remove the stems from the strawberries (set a few aside for decoration). Blend them with erythritol.

  2. 2. Pour hot water over the gelatin.

  3. 3. Add the strawberry mixture and gelatin to a bowl, then blend until the mixture thickens.

  4. 4. Gradually add one spoonful of Skyr at a time, continuing to beat the mixture.

  5. 5. Arrange the sponge fingers at the bottom of a springform pan, then pour the mixture on top.

  6. 6. Decorate the top with the remaining fresh strawberries, cut in half, and refrigerate for at least 3 hours to set.
