  • Plant milk7× tablespoon (70 g)
  • Skyr, Icelandic yoghurt4× tablespoon (60 g)
  • Chick pea flour8× teaspoon (48 g)
  • Olive oil1× tablespoon (10 g)
  • Mayonnaise1× teaspoon (10 g)
  • Dill, fresh2× tablespoon (10 g)
  • Sweet paprika1× tablespoon (6 g)

  • Smoked Paprika5× pinch (5 g)
  • Garlic1× clove (5 g)

How to make Crispy Cauliflower in Breadcrumbs with Dill Dip

  1. 1. Prepare the cauliflower. Remove the leaves and stems, then cut it into florets.

  2. 2. Boil the cauliflower florets in salted water for 5–6 minutes until soft. Drain and leave to dry completely.

  3. 3. In a bowl, mix the chickpea flour, spices, and plant-based milk until smooth.

  4. 4. In another bowl, place the breadcrumbs.

  5. 5. Dip each cauliflower floret into the batter, shake off the excess, and then coat in breadcrumbs.

  6. 6. Place the coated cauliflower pieces in the air fryer basket lined with baking paper. Spray each piece with oil and fry in the air fryer at 200°C for about 10–12 minutes, until the breadcrumbs turn golden and crispy. You can also bake them in the oven.

  7. 7. Meanwhile, in a small bowl, mix the Skyr, mayonnaise, chopped dill, and crushed garlic. Season with salt and pepper to taste.

  8. 8. Serve the crispy cauliflower with the dill dip.
