How to make Baked courgette with eggs and halloumi

  1. 1. Heat the oven to 180C.

  2. 2. Cut the courgette into long slices 5 mm thick, dice the tomatoes and onion.

  3. 3. Heat up the olive oil in a pan, and briefly fry the courgette slices along with the onion and tomato.

  4. 4. Crumble the cheese into smaller pieces, beat the egg in a bowl with the salt and pepper, press the garlic.

  5. 5. Lay the courgette slices out in a casserole dish, sprinkle with salt, pepper, herbs and garlic.

  6. 6. Arrange the tomatoes and onion on the courgette, sprinkle with cheese and pour the egg over.

  7. 7. Bake for 15 minutes until the egg is well set.
