How to make Baked Omelette with Orange Mousse and Chocolate Chunks

  1. 1. Blend the cottage cheese with the skyr.

  2. 2. Separate the egg yolks from the eggs. Whisk all the egg whites until stiff with a small pinch of salt. Add the cottage cheese, egg yolks, flour, whey protein, erythritol, vanilla extract, and baking powder. Mix all the ingredients together.

  3. 3. Pour the mixture into a round ovenproof dish greased with olive oil and bake for about 20 minutes. Alternatively, you can fry the omelette in olive oil in a pan (covered and on low heat).

  4. 4. Peel the orange (also remove the white pith). Cut it into cubes and place in a small saucepan. Add water, honey, cardamom, ginger, and cook for about 8 minutes, then blend into a smooth mousse.

  5. 5. Transfer the omelette to a plate and drizzle with the orange mousse.

  6. 6. Decorate the dish with grated chocolate.
