  • Cottage cheese10× tablespoon (200 g)
  • Eggs chicken2× portion (120 g)
  • Banana1× piece (120 g)
  • Blackberries1.5× handful (90 g)
  • Wheat flour, white, plain3× tablespoon (45 g)
  • Erythritol4× tablespoon (40 g)
  • Olive oil1× tablespoon (10 g)

How to make Banana curd cheese omelette with berry sauce

  1. 1. Use a blender to mix the curd cheese, banana and half of the erythritol together.

  2. 2. Crack the eggs into a separate bowl and beat them into a foam.

  3. 3. Add the previously blended cheese and flour to the egg mass and mix together thoroughly.

  4. 4. Put the berries and remaining erythritol in a pan and heat until they thicken into a sauce.

  5. 5. Heat up an oiled pan, then pour in the previously prepared mass.

  6. 6. Cover the pan, reduce the heat and fry the omelette until the top sets. Once it does, hold down the lid and vigorously turn the pan over and replace the upside down omelette in the pan.

  7. 7. Fry the omelette on the other side for about 2 minutes, then slide it onto a plate.

  8. 8. Serve with the blackberry sauce.
