How to make Chicken fillets in tomato sauce with olives and mozzarella

  1. 1. Season the chicken breasts with the salt, pepper, paprika and oregano. Rub with the grated garlic and coat with half of the olive oil. Leave to marinate for a minimum of half an hour

  2. 2. Blanch the tomatoes with boiling water, remove the skin and dice finely (or use tinned tomatoes instead)

  3. 3. Heat up the remaining oil in a pan, put the chicken in and fry for 4 minutes on each side. Add the tomatoes, season with salt, cover and cook for around 5 minutes

  4. 4. Remove the cover, turn the meat over and sprinkle it with grated mozzarella. Add the olives (black ones suit best) and boil everything without a cover for around 6 minutes more

  5. 5. Garnish with dried oregano and basil leaves
