How to make Chicken Liver in Mushroom Sauce with Broccoli Mash

  1. 1. Slice the bacon and fry until crispy. Reserve the released fat.

  2. 2. Finely chop the shallot. Quarter the mushrooms and sauté with the shallot in butter (1/4 of the total amount). Set aside.

  3. 3. In the same pan, add butter (1/4 of the total amount) and fry the chicken liver for a few minutes on each side. Add the bacon, shallots, and mushrooms, followed by the double cream. Stir and simmer on low heat until thickened. Sprinkle with chopped parsley.

  4. 4. Boil the broccoli in slightly salted water. Drain and blend with the remaining butter and cream cheese. Season with salt and pepper.

  5. 5. Serve the liver with the sauce and broccoli mash.
