How to make Chicken with Sweet Potatoes in Tomatoes

  1. 1. Cut the onion and bell pepper into small cubes. Cut the sweet potatoes into larger, but still small cubes (about 1 cm on each side).

  2. 2. Sauté the onion in olive oil with the garlic crushed through a press.

  3. 3. Add the ground chicken and spices, and continue to sauté everything, stirring. Once the chicken is fully browned, remove it from the pan and set it aside on a separate plate.

  4. 4. Add the sweet potatoes, canned tomatoes, and water to the same pan. Season with a pinch of salt and pepper, and cook covered for about 10-15 minutes.

  5. 5. Once the sweet potatoes are soft, add the sautéed ingredients back to the pan and mix everything together. Then, place slices of mozzarella on top and cook for a while covered until the mozzarella melts.

  6. 6. Serve decorated with fresh coriander and a wedge of lime.
