How to make Omelette with courgette and curd cheese

  1. 1. Crack the egg into a bowl, season with salt and pepper, add half of the yoghurt and stir

  2. 2. Grate the courgette into strips, add to the egg mass and stir

  3. 3. Pour the resulting mass into a dry, heated non-stick pan

  4. 4. Cover and fry on a low heat until the eggs set

  5. 5. Combine the curd cheese, half of the yoghurt and diced tomatoes. Season with salt and pepper, add the chopped chives and stir

  6. 6. Transfer the cooked omelette to a plate, and spread the curd cheese spread on it
