How to make Pasta with Shrimp in Roasted Red Pepper and Peanut Butter Sauce

  1. 1. Preheat the oven to 200°C. Cut the pepper in half and remove the inedible parts. Place the pepper on a baking sheet lined with paper and bake for about 30 minutes. After this time, place it in a bowl and cover it tightly with a plate. After about 10 minutes, the skin of the pepper will easily peel off.

  2. 2. Cook the pasta according to the package instructions.

  3. 3. Wash, clean, and season the shrimp with salt and pepper. Finely chop the onion. Use a vegetable peeler to slice the zucchini into ribbons.

  4. 4. Heat the olive oil in a pan. Sauté the onion and shrimp. After about 5-6 minutes, when the shrimp are lightly sautéed and the onion is translucent, remove the pan from the heat and begin making the sauce.

  5. 5. Peel the pepper and place it in a blender. Add the peanut butter, soy cream, soy sauce, starch, fresh basil, ginger, hot paprika, and salt. Blend until smooth.

  6. 6. Reheat the pan with the shrimp. Once the ingredients are warm, add the zucchini and cook for about 3 minutes, stirring.

  7. 7. Add the drained pasta and the sauce. Stir and cook for another 2 minutes, ensuring the pasta is thoroughly coated with the sauce.
