  • Eggs chicken yolk1× piece (20 g)
  • Erythritol1× teaspoon (5 g)
  • Salt3× pinch (1.5 g)

How to make Salmon with hollandaise sauce and coleslaw

  1. 1. Wash the salmon, pat dry with paper towels, then season with salt and pepper. Bake at 180°C for about 20 minutes.

  2. 2. Prepare the coleslaw. Peel the carrot and grate it using the larger holes of your grater. Shred the cabbage, finely chop the onion. Mix the cut vegetables with mayonnaise, lemon juice (3/4 of the amount), erythritol, salt, and pepper.

  3. 3. Prepare the Hollandaise sauce. Whip the egg yolks with lemon juice (1/4 of the amount), salt, and pepper. While still whipping, gradually add melted, hot butter. The sauce should be thick and smooth, with the consistency of mayo.

  4. 4. Serve the salmon drizzled with the Hollandaise sauce and the coleslaw on the side.
