How to make Salmon with Mango and Avocado Salsa and Salad

  1. 1. In a small bowl, mix the soy sauce with half of the honey, 1/3 of the lime juice, the garlic pressed through a garlic press, and the ginger.

  2. 2. Place the salmon in a small ovenproof dish, brush it with the prepared marinade, and bake for 15 minutes at 200°C.

  3. 3. Cook the spelt groats according to the instructions on the packaging.

  4. 4. On a plate, arrange the lamb's lettuce, and place halved cherry tomatoes on top. Sprinkle the vegetables with the cooked spelt groats.

  5. 5. Peel and dice the avocado and mango. Mix them with the remaining lime juice, the other half of the honey, chopped fresh coriander, and a pinch of salt.

  6. 6. Place the fish next to the salad. Put the mango and avocado salsa on top of the fish.
